Thursday Night Recipe: Cilantro Chicken Salad

I scored this recipe off a new blog I found on Mary Alice's blog called Skinny Tastes. She does a lot of WW recipes. I love everything about cilantro and lime!  It was very good, and very light. I used Veganaise instead of Mayo and the lime juice cuts that nicely. This is great for a light lunch on these SUPER hot days, instead of a dinner item (IMO).
I served with fresh slices of tomatoes and a side salad. We got some new salad dressing at Publix this week ( pictured below). If you like the Ginger dressing in Japanese Steakhouses then you will love this dressing. It was fabulous!

Cilantro Chicken Salad


  1. 7 oz cooked chicken breast, shredded or diced
  2. 2 tbsp light mayonnaise
  3. 1 small scallion, chopped
  4. 2 tsp lime juice
  5. 2 tbsp chopped cilantro
  6. salt and pepper
  7. pinch garlic powder
  8. pinch of cumin
  9. pinch of chile powder
  10. fat free chicken broth


  1. Combine chicken, mayonnaise, scallions, lime juice, and cilantro. Season to taste with salt, pepper, garlic powder, cumin, and chile powder. Add a little chicken broth if chicken seams too dry, 1 tbsp at a time.
