New Recipe Week!

I am desperate for some new things to cook around here, so I am forcing myself to flip through magazines and find some stuff to try and to try and be open minded about it. I got this recipe from ShopSmart Magazine. It was good. I served it with lima beans and couscous. I think next time I make this I will use more Salt, or some sort of spice, and add garlic.






Balsamic Chicken in Tomato and Mushroom Sauce

Ingredients

  1. 4 boneless Chicken Breast Halves
  2. 1/2 tsp each of Salt & Pepper
  3. 3 Tablespoon of Virgin Olive Oil
  4. 1 Medium Onion Sliced
  5. 1/2 lb of quartered mushrooms
  6. 1 can of diced tomatoes
  7. 2 Tablespoon of Balsamic Vinegar
  8. 1/4 cup siced fresh basil

Directions

  1. 1. sprinkle the chicken with salt and pepper. In a LARGE skillet heat 2 tablespoons of olive oil and add chicken. Cook until lightly browned on both sides. ( about 5 mins)
  2. Remove chicken from skillet and add sliced onion, mushrooms, and olive oil. Cook until onions are soft.
  3. Stir in diced tomatoes, undrained, and the vinegar. Bring to a boil. Return chicken to the skillet, reduce heat and simmer for 10 minutes of until chicken is cooked.
  4. Remove chicken to a platter stir basil into sauce and pour over chicken.
