Stuffed Mushrooms Recipe

I have not been that inspired in the kitchen lately, and then I read THIS over at My Chihuahua Bites and thought it was a neat idea. I liked how she referenced the original recipe and shows how she changed it up, and I decided to do the same thing! Below you will see the changes I made, which are mostly making a vegetarian dish and adding tomatoes! Erik gave it 5 out of 5 stars so that makes it a winner in Grizaland.

Stuffed Portabella Mushrooms


  1. 4 portabella mushrooms, cleaned
  2. 1/4 cup butter
  3. 4 oz cream cheese
  4. Spices to taste (whatever floats your boat – I used italian spices and garlic powder)
  5. 1 onion
  6. 1 tsp minced garlic
  7. 1/2 cup heavy cream
  8. 1 Chopped fresh tomato
  9. 1/2 row of Townhouse crackers or Ritz ground up


  1. Start by removing the stems of the portabellas. Chop the stems and onion very finely. Add the onion, stems, and butter to the pan and sauté until soft and the onions are transparent.
  2. Add the cream and cream cheese and heat until the cream cheese melts and the mixture is bubbly. Turn to low and add chicken and spices. Let the mixture simmer until it thickens.
  3. Mix in tomatoes and scoop mixture into mushroom caps
  4. Sprinkle ground up crackers over filled mushrooms
  5. Put mushrooms in oven on Broil for 10 minutes

Sounds yummy...I'll have to try it.
I have a great recipe for mushrooms stuffed with italian sausage...YUM! They're perfect for serving as appetizers at parties...I guess I'll have put the recipe up on my blog.
