Alert: Kitchen Success

Long Ago, Marlee gave me this recipe.Ironically, the little girl I used to baby sit is now a full on domesticated diva and a momma, and she is teaching me things now!
We made this dish tonight and it was fantastic! (and fattening no doubt!) you can substitute the mayo with Veganaise and we prefer those fried onion crispies instead of croutons on top.
PS. Canned Artichokes are not cheap. If I knew how to cook them I would have done that.

Chicken & Artichoke Casserole


  1. 2 14 oz cans of quartered artichokes, drained
  2. 2 2/3 cups chopped, cooked, chicken
  3. 2 cans cream of chicken soup
  4. 1 cup of mayo
  5. 1 tbs lemon juice
  6. 1/4 - 1/2 tsp of curry powder
  7. 1 1/4 cup grated sharp cheddar cheese
  8. 1 1/4 cup croutons smashed
  9. 2 tbsp melted butter


  1. Preheat Oven to 350
  2. Layer artichokes at bottom of casserole dish, then chicken.
  3. Mix soup, mayo, lemon juice, & curry. Put on top of chicken and artichokes.
  4. Sprinkle on cheese and croutons
  5. Bake for 25 minutes
