Tuesdays In the Kitchen: Paella

This was actually really good! I was surprised. Be ware though: Saffron is expensive...almost as much as gold. ha. Also next time I make this I would add more onion (but that's just me!)



  1. 1/4 cup of Olive Oil
  2. 1 small onion, diced
  3. 1 medium green bell pepper, diced
  4. 1 large tomato, skinned and diced
  5. 1 1/2 cups (12 oz) rice
  6. 8 oz uncooked shrimp, peeled and deveined
  7. 3 1/4 (26 fl. oz) chicken broth
  8. 1/4 teaspoon saffron
  9. 1/4 teaspoon ground cumin
  10. Freshly ground pepper, to taste
  11. Lemon wedges, to garnish


  1. In a pressure cooker, sauté the onion and pepper in the olive oil until the onion is tender. Add the tomato and cook for a further 5 minutes. Add the rice and sauté until translucent.
  2. Pour in the broth, shrimp, saffron, cumin, and pepper, close the pressure cooker, bring to high pressure over medium heat, and cook for a further 3 minutes.
  3. Transfer to a paella pan or serving platter
  4. garnish with lemon wedges, and serve.

I had the yummiest paella in Spain made by my friend's mother! There's a picture of it on my blog. This recipe looks good. Hope it turns out great! :)

Saffron is actually the most expensive spice in the world I think.. it is used in Indian cooking as well.
