My Latest Lessons in the World of Cooking...

This is what I made Erik & I last night for dinner. (Thanks WOoten!) Erik said it was my first meal to exceed the 5 star rating. ( We rate all meals between 0-5 stars for my cooking software so that I can remember what was worth cooking again)

Mexican Casserole

Ingredients

  1. oil for frying
  2. 10 ounces cubed skinless, boneless chicken breast meat
  3. 3/8 (1.25 ounce) package taco seasoning mix
  4. 3/4 (15 ounce) can black beans, rinsed and drained
  5. 3/4 (8.75 ounce) can sweet corn, drained
  6. 3 tablespoons and 1/2 teaspoon salsa
  7. water as needed
  8. 3/4 cup and 2 teaspoons shredded Mexican-style cheese
  9. 1 cup and 3 tablespoons crushed plain tortilla chips

Directions

  1. In a large skillet over medium high heat, saute chicken in oil until cooked through and no longer pink inside. Add taco seasoning, beans, corn, salsa and a little water to prevent drying out. Cover skillet and simmer over medium low heat for 10 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Transfer chicken mixture to a 9x13 inch baking dish. Top with 1/2 cup of the cheese and crushed tortilla chips.
  4. Bake in the preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bub

Mexican CornBread

 

Ingredients

  1. 1 (8.5 ounce) package self-rising cornmeal
  2. 1 egg
  3. 1/2 cup milk
  4. 1 (8 ounce) can cream-style corn
  5. 1 cup shredded Monterey Jack cheese
  6. 1 (4 ounce) can diced green chile peppers, drained

Directions

  1. 1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x9 inch baking pan. 2. Place cornmeal mix in a large bowl. Stir in egg, milk, creamed corn, cheese and diced green chile peppers. Spread batter into prepared pan. 3. Bake in preheated oven for 25 minutes, or until golden brown and cornbread pulls away from sides of pan.
