A Delicious Recipe: Taco Bake by Lindsay Pauley

Taco Bake

Ingredients

  1. 1 lb. ground round1 pkg. taco seasoning15 oz. can tomatoes with green chilis8 oz. seashell pasta (I used wheel pasta)8 oz. pkg. cream cheese1/2 cup sour cream8 oz. sharp cheddar cheese, shredded

Directions

  1. Brown ground beef; drain. Add taco seasoning and tomatoes with chilis. Bring to a boil and then simmer for 20 minutes. In the meantime, cook pasta according to directions; drain. Mix softened cream cheese and sour cream in separate bowl. Spray bottom of 9x13-inch pan with Pam. Put pasta in bottom of pan. Spread cream cheese mixture over pasta. Spoon ground beef mixture over this. Sprinkle shredded cheese on top. Bake @ 350 degrees for 30 minutes. Cool about 15-20 minutes before serving.

Everyone has been asking how the cooking is going and so far so good! This recipe was really good. Totally fattening and not good for you but sooo yummy. Its the only casserole type dish that I have made and wasnt sick of eating after 2 helpings. Tastes just like a Taco!

Also I was wondering if any of you were aware of this chick that started a blog last year based on the idea that she would make something for dinner EVERY NIGHT in the crock pot! How crazy is that? and also... I wanted to thank LP for sending me Mrs. Norma's mac n cheese recipe. She found a copy at her parents house that was years old and straight from Mrs Norma with all her commentary which is super cute and sweet and means alot for my Recipe Book..

Taco bake is good! Caro and I often make taco salad. It is pretty healthy. See below.

1 lb ground turkey
taco seasoning
1/2 an onion chopped
whatever you like in salad

Brown the meat, add the onion and cook for a few minutes, then mix in seasoning. I usually cut up lettuce, cucumber, red bell pepper or green bell pepper and a tomato and have some shredded cheese to put on my salad. Then in a bowl I put lettuce, cheese, taco meat, then the rest of the toppings. If you want a nacho feel, put it all on top of some tortilla chips. Let me know if you try it. Very easy to fix and very good leftover. Let me know if you try it!
